Here is how you make Romaine Tacos:

Place rice in a medium saucepan. Add 3 cups hot water. Bring to a boiling, reduce heat, and cook for 45 minutes or until tender. Drain water and return rice to pan.In a small non-stick skillet place onion with 2 to 3 tablespoons of water. Saute until onion is translucent. Add to pan with rice. Add beans, tomatoes and taco seasoning. Heat through. Allow mixture to cool slightly. Scoop taco mixture into the 8 lettuce leaves, placing an equal amount of mixture in each.
