1 tbsp Olive Oil, divided
1 tbsp Earth balance buttery spread, organic, whipped
2 tbsp chopped Shallots
2 clove Garlic, minced
12 oz Baby Bella Mushrooms, sliced
1/2 tsp Herbs de Provence
1/4 tsp Truffle Salt, or regular salt
1/4 tsp white pepper
1/2 cup Marsala Cooking Wine
4 tbsp Whole Wheat Flour, divided
1.5 cup Vegetable Broth
1 tsp Better than Bouillon, reduced sodium
2 tbsp Parsley
1 block Tofu, extra firm, drained and pressed


How Do I Make Tofu Truffle Marsala?

Here is how you make Tofu Truffle Marsala:

Drain and press tofu. Meanwhile, in a large fry pan, add olive oil, reserving 1 tsp for later. Once heated add shallots and garlic and saut? until fragrant, about 30 seconds. Add butter, mushrooms, truffle salt and herbs de provence. Saut? until mushrooms are softened and all liquid has evaporated. In the meantime, slice the tofu into thick 1/2 inch slices. Dredge in 2 tbsp whole wheat flour. Shake off excess. Reserve the leftover flour, it should be about 1 tbsp worth. In a separate pan, add rest of olive oil and heat. Pan fry the tofu until lightly browned on both sides. Return to your mushroom mixture and add the reserved flour along with 2 more tbsp flour to make a total of 3 tbsp added. Stir to cover mushrooms. Add marsala wine and stock to deglaze. Cook until sauce is thickened. Serve tofu topped with mushrooms and sauce and garnish with fresh parsley.
