4 tsp canola oil
3/4 tsp salt
1 onion sliced 1/4 inch thick
2 medium garlic cloves, finely chopped
1 tsp freshly grated ginger
1 tsp mustard seeds
1 pound baby spinach
1 cup low-fat or non-fat plain yogurt
1 1/2 tsp curry powder
1/4 tsp ground cumin


How Do I Make Saag Tofu?

Here is how you make Saag Tofu:

1. Cut tofu into thirds lengthwise and eighths crosswise. Heat 2 teaspoons of oil in a large non-stick skillet. Add tofu and sprinkle with 1/4 tsp salt. Cook, stirring gently every 2 to 3 minutes, until browned on all sides, 6 to 8 minutes. Transfer to a plate. 2. Add the remaining 2 tsps oil to the pan and reduce heat to medium. Add onion, garlic, ginger, and mustard seeds and cook until the onion is translucent, 4 to 6 minutes. Add spinach in batches and cook until wilted, stirring frequently. 3. Combine yogurt with curry powder and cumin and the remaining 1/2 tsp salt in a small bowl.
