Here is how you make Quinotto with Tofu:

Sautee the onion until golden. Throw in lentils and quinoa and toast for 2-3 minutes. Add peas and mix quickly. Add tomato sauce, vegetable broth, spices and chili powder. Bring to a boil, reduce heat to minimum, cover and cook for about 20 minutes.
