2 packages of LITE FIRM tofu (if you use another kind, be sure to adjust the calories!)
Spice mixture of your choosing (To coat top of tofu. I use one I made with chili powders.)

For the sauce:
6 tablespoons Lime Juice
2 teaspoons Sugar
2 Tablespoons oil
2 teaspoons pepper
1 1/2 teaspoon salt
8 cloves of garlic
4 tablespoons chopped parsley
2 large onions, sliced into crescents.

4 tablespoons oil for searing

Here is how you make pan seared mojo tofu:

Slice the tofu into 8 equal sized steaks. Place on a cutting board or simlar at a very slight angle in the sink. Place something heavy on top of it (I put a cake pan with a filled tea kettle.) to press. Balance it carefully and leave it for 2 hours to press and drain.In a small saucepan on very low heat, combine all sauce ingredients except for onions. let simmer for 3 minutes, remove from heat.In a large skillet, heat 1 tablespoon oil until it starts to ripple. Saute onions until they begin to brown. continue to cook for an additional 5 minutes.Allow onions to cool for 5 minutes, then combine with the rest of sauce and set aside.Coat the top of each tofu steak with spice blend. place a shallow layer of oil in the bootom of a pan. Heat until you see slight ripples, but don't allow it to smoke.Turn off the heat and carefully lay in the tofu, spice side down.Return to heat spice other side, and cook until the bottom is golden.Again, turn the heat off and carefully flip with tongs or a spatula.Turn heat back on and cook until the other side is golden.if done properly, most of the oil should have remained in the pan.Serve tofu steak with sauced-onions on top.Serving Size:?Makes 8 servingsNumber of Servings: 8Recipe submitted by SparkPeople user 1THIRTY3.
