Heat 1 cup raw Brown Rice with 1-1/2 cups water on high covered until boiling, then immediately turn down to a simmer. Cook for 45 minutes total. Meanwhile start preparing the tofu and vegetables.Cut your Tofu in half. Store away one half for another meal. Take the remaining half, and cutting it through from the shorter side, slice it into two big flat square "steaks". Make the marinate mix in a edged large plate. Add 1/2 Tablespoon Sesame Oil, Soy Sauce and Chopped Lemongrass. Stir. Place the tofu steaks on top of the marinade - side by side. Carefully with Flat Spatula, turn after 5 minutes to marinate other side. Turn once or twice more. Wait until brown rice is about 10 minutes before finished, before continuing.Heat a cast Iron Skillet on Med-High, and another pan, non-stick on Medium. Drizzle a litle bit of the remaining 1/2 Tablespoon Sesame Oil in the Non-stick pan, and the majority of the 1/2 Tablespoon Sesame Oil in the Cast Iron Skillet. Place tofu steaks in the cast iron skillet with all of the lemongrass, reserving the marinade for the vegetables. Put the vegetables in the non-stick pan, and pour the clear marinade over them, cover, and reduce to a simmer.Sear the tofu steaks in the skillet, ucovered, until well browned, carefully turn over with a spatula, and cook for another ut 3 to 5 minutes - watch carefully. Squeeze one Lime Wedge or one tablespoon of lime juice over the tofu steaks and around the skillet and remove the lemongrass and discard before serving. Serve on dinner plates.
