I make this tofu stroganoff at home as I love the hearty 'meaty' winter meals like this but am a vego so I try out alternatives where possible! It's easy to make, and hard to go wrong as long as you follow the stroganoff recipe base instructions that you buy. My partner loves it and he is a major meat head that loves a steak everynight.You can also make this Vegan by substituing the sour cream for vegan cream cheese with a bit of lemon juice mixed in to 'sour' the cheese. Also if you are vegan make sure the recipe base you buy is vegan too!Serve with either your favourite pasta or rice!

The ingredients for Tofu Stroganoff are:

- Tofu, firm (around 1 cup diced)
- 1 onion (diced)
-2 cups button mushrooms (sliced)
- Stroganoff recipe base (I use Maggi)
- 1/2 cup sour cream (or can use vegan cream cheese with a bit of lemon juice mixed in to 'sour')
- 1-2 tablespoons oil to fry

- Favourite pasta or rice to feed 4!



How Do I Make Tofu Stroganoff?

Here is how you make Tofu Stroganoff:

1. Cook favourite pasta or rice as per instructions on the packet.2. Drain excess water from tofu and cut into dices. Can use more than one cup of tofu, just depends on personal preference.3. Dice onion and slice mushrooms.4. Place around 1 tablespoon of oil or margarine into a frying pan and heat. Add tofu and cook for a few minutes until the outside becomes clightly browned.5. Add onion to the frying pan and continue to cook. When onion starts to soften ass mushrooms to the pan and cook.6. Lower heat on frying pan and add stroganoff recipe base (preparation of recipe base will depend on which brand of base you buy).7. Leave to simmer uncovered for around 10 minutes, until sauce begins to thicken (this will also depend on the brand of the base).8. Turn off heat and add in half a cup of sour cream and stir in well.
