Add the V8, water, bay leaf, and lentils. Bring to a boil. Reduce heat and simmer 25-35 minutes, or until lentils are soft but not mushy. You may need to add some extra water if the lentils soak it all up. Turn off the heat, stir in the couscous, tomato, basil, and cheese. Let sit 5 minutes. Season with salt and pepper to taste.
