3 cup, chopped Swiss Chard
1 cup, chopped Onions, raw
2 tbsp Extra Virgin Olive Oil
8 large Egg, fresh, whole, raw
8 slice, medium (1/4" thick) Red Ripe Tomatoes
4 tbsp Parmesan Cheese, shredded
4 cloves garlic, minced
2 Tb. fresh chopped basil
salt and pepper to taste


How Do I Make Swiss Chard and Tomato Frittata?

Here is how you make Swiss Chard and Tomato Frittata:

Wash and chop the chard, discarding the stems. In a 10-12" skillet, saute the onions and garlic in 1 Tb. of the olive oil. Add the chard, stir, cover and lower heat. Cook for about 10 min. Remove the lid and drain if necessary. In a large bowl, beat the eggs, basil, salt and pepper till blended. Stir in the chard, return to skillet. Arrange the tomato slices on top then sprinkle with the parmesan cheese.
