1cup arborio rice
1Tbsp olive oil
2 cans chopped tomatoes in tomato juice
1/2 green pepper, diced
1 cup diced cauliflower
1 cup chopped broccoli
60 gms grated parmesan cheese
1 onion finely, chopped
2 cloves garlic, finely chopped
salt and pepper to taste
fresh oregano, chopped
fresh parsley, chopped
2 Tblsp tomato paste.

How Do I Make Tomato Risotto?

Here is how you make Tomato Risotto:

Sautee the onions and garlic in the olive oil over a medium heat. Add the rice and stir well to coat in the oil. Strain the tomatoes and pour the juice into the rice, stir well. Bring back up to a simmer then turn heat to med/low.Over the next 10 minutes slowly add water to the mixture as it begins to be absorbed, don't let it dry out. After 10 minutes, add the drained tomatoes, tomato paste, herbs and vegetables. Stir well, continue to add water as needed while veges cook and rice finishes cooking. When rice is done (still firm but no grittiness) add all but 4 tsp of the parmesan cheese and season to taste.Stir well to combine.Serve hot sprinkled with a tsp of parmesan and chopped fresh parsley.Number of Servings: 4Recipe submitted by SparkPeople user MILLY61.
