Here is how you make Roasted Pepper and Tomato Marinara:

Prepare tomatoes by removing stem and core. Wash thoroughly and slice in half making a top and a bottom. Put in a ziploc bag or bowl, pour over just enough olive oil to coat and toss. Pour onto a cookie sheet and roast in the oven at 400* for 30 minutes or until browned and soft. Wash peppers but do not cut. Grill peppers for 15 minutes rotating as needed or until all sides are blackened. Pull peppers off the grill and immediately put into a bowl with cling wrap on it. Wait for the bowl to steam and peppers to cool. Remove the skin, it should peel off if it hasn't already fallen off. Puree both the tomatoes and peppers in a food processor. Add more olive oil if needed to blend better. Add garlic and seasonings at this time. Add your favorite seasonings to taste. Simmer on the stovetop for as long or as little as you like. The more you simmer, the deeper the taste will be - just like grandma's cooking! Add more vegetables if you like. If you would like to add grated parmesan cheese for flavor, do it during the simmering. It'll melt quickly. Serve over pasta, or use as a great dipping sauce. *This sauce can be frozen in smaller batches if necessary.
