1 cup Baby Arugula
1 Tbsp Balsamic Vinegar
4 English Muffins (100 calorie)
4 Large Portabella Mushrooms
4 Tomato Slices
1 Tbsp Extra Virgin Olive Oil
Salt and Pepper, to taste
4 oz Low Moisture Part Skim Mozzarella Cheese


How Do I Make Portabella, Tomato, and Mozzarella Sandwiches (Low Calorie and Delicious!)?

Here is how you make Portabella, Tomato, and Mozzarella Sandwiches (Low Calorie and Delicious!):

Serves 4-8 (Makes 8 appetizer size sandwiches. You can use smaller portabella mushrooms and make 4 sandwiches. Just don't cut the portabellas or tomatoes in half and use 2 English muffins and 1 oz cheese per sandwich instead.)Cut the English Muffins in half and toast in a toaster. Remove the stems from the arugula and toss in balsamic vinegar. Set aside. Wash the portabella mushrooms and remove the stems. Cut a tomato into 4 thick slices (about 1/4 inch thick). Brush mushrooms and tomato slices on both sides with oil. Sprinkle with salt and pepper, according to taste. Cut the portabellas in half and grill top down, stem side up. Cook about 4 minutes and turn over. Add the tomatoes and cook until tender, turning over once. Remove the tomatoes from the grill and cut in half. (Be sure to watch the tomatoes - they will fall apart if they cook too long.) Put mozzarella on each mushroom half, cover and grill another 1-2 minutes until the cheese has melted. Assemble the sandwiches as follows: half of a toasted English muffin, baby arugula coated in vinegar, grilled tomato slice, portabella topped with mozzarella cheese.Number of Servings: 8Recipe submitted by SparkPeople user CLKM777.
