1 1/2 c. water
juice of 1 lime
1 box (5.8 oz) couscous, any flavor
1/2 c. shredded fat free cheddar cheese

Combine first 8 ingredients and sautee until tender.Add tomatoes (undrained), lima beans, water, lime juice and spice packet from couscous box and bring to a boil. Reduce heat and slowly boil for 5 minutes. Stir in dry couscous, cover and remove from heat and cover.
