In bowl mix flour, gluten, sugar, and salt. Add yeast and knead for 10 minutes. Place dough in bowl and let rise for an hour. Dough should be springy. Put large pot of water on to boil, add salt. Preheat oven to 425. Turn dough out and cut into 12 equal pieces. Roll each piece in to a ball, tuck dough under until you poke a hole in the center. Work hole till it's half-dollar sized. Once water is boiling, reduce to a simmer and add three of the bagels. Simmer for 1 minute, flip over and simmer for another minute. Remove bagels and repeat with remaining bagels. Bake boiled bagels for 18-20 minutes, until amber brown.
