Shred zucchini, stir in salt and place in colander. Let sit, then squeeze out excess water. In food processor, combine beans, water, tofu and bread crumbs, and process until smooth. In large mixing bowl, combine zucchini, cheese, green onions and bean mixture. Add salt and pepper to taste. Stir until well mixed. Divide into six portions. Spray a cookie sheet with nonstick cooking spray. Form mixture into balls and plop on cookie sheet. Pat into thin patty, about 1/2 inch thick. Spray tops with cooking spray. Bake at 400 degrees for 30 minutes. Use convection setting if available. If using conventional oven, place patties under a broiler for 5 minutes at end of baking to crisp and brown edges.Makes 6 servings.
