2 c portobella or button mushrooms, sliced
4-5 c spinach, chopped
2 garlic cloves (2 tsp minced garlic)
2 14.5 oz cans chopped tomatoes
2 TBSP tomato puree
Black pepper, sea salt, parsley, nutmeg, basil

Here is how you make Vegan Gourmet Lasgana:

Start by heating a large pot of water for lasgana noodles. During the whole cooking process below continue to cook noodles, 3-4 at a time for about 8-10 minutes. Drain and place on wax paper. Meanwhile...In a medium saucepan heat olive oil, veg stock, and flour. Whisk together over low heat for about 5 minutes, until thick and smooth. Season with pepper, sea salt, parsley, and basil (to taste). Add soy cheese and stir together till mixed well. Set aside.In a wok or larger frying pan spray crisco or PAM olive oil and heat. Add onions and mushrooms. Saute in medium heat until onions are golden brown. Add spinach and cook for a minute, until leaves are wilted. Season with salt, pepper, and a pinch of nutmeg. Set aside.Pre-heat over at 400 degrees at this time. In another saucepan spray Crisco or PAM olive oil in the middle, add garlic cloves and brown (about 3 minutes on medium heat). Add tomato puree and canned tomatoes. Simmer over low heat for 10 minutes until the sauce thickens. In an 8x8 or 9x9 pan spray Crisco lightly. Cover the bottom with half of the tomato sauce. Cover the tomato sauce with a layer of noodles. Spread about 1/2 of the white sauce over the noodles and 1/2 the spinach mixture over the white sauce. Lay another layer of noodles on top. Lay the remaining tomato sauce and spinach mix over the noodles and lay the final noodles over that. End with the rest of the cheese sauce. Add more grated cheese over the top if desired.Cook for 20 minutes, or until the sauce is bubbling and the cheese starts to goldenServes 12 slices.
