(this will cook for 20 minutes then remove from heat)2) Heat a big non-stick pan with at least 2 inch sides to medium heat, as it heats chop your vegetables (not the Tomatoes!) and add them as you chop, stirring occassionally. Stir in the nutritional yeast. Stir in the soy milk. Let this come to a boil stirring occasionally. 6) once the veggie mixture starts to thicken stir in the tomatoes. Stir in the rice (it should be done by now). Gently fold in the tofu.7) put in a pretty dish and top with chopped cilantro.
