2 stalks celery (optional) sliced or whole
1 can great northern beans
1/2 cup frozen corn
1/2 cup frozen peas
1/2 cup frozen green beans
oregano (to taste)
Italian seasonings (to taste)
Salt, at least 1/2 teaspoon, then to taste
Pepper to taste
1/2 cup ditalini (pasta)

Here is how you make vegan ministrone:

Sautee diced onions in a large saucepan at medium heat. When the onions are almost translucent, add crushed garlic. Sautee for another minute. Add tomatoes and 5 cups water and the boullion. Turn the heat up to high. Add chopped carrots and celery and the potatoes, cubed small for soup and bring to a boil. After 10 minutes, add all the frozen vegetables. Bring back to a boil for 10 minutes then add the ditalini and the can of Great Northern Beans, drained. Season with herbs, salt and pepper. Bring back to a boil. Turn it off or way down low for a little while (about 20 minutes), until it looks done. I have an electric stove that continues to cook for about a half hour after I turn it off and so I just turn it off and let it continue to cook.
