1 1/3 c unsweetened soymilk
1/4 t salt
1/4 tsp black pepper
1/4 t freshly grated nutmeg
1 tsp dijon mustard (or more to taste)
pinch cayenne (optional)
8 slices Morningstar Farms fake bacon (cooked)

1/2 c flour
1/2 t baking powder

3/4 cup fat free cheddar shreds OR vegan cheddar

Here is how you make FanciMcG's Almost Vegan Quiche - Tofu Crustless:

Cook the veg:In nonstick skillet, saute the veg using a little veg broth (instead of oil). Cook until all are tender and liquid is evaporated (see tip).In a large bowl, mix together the egg sub, tofu, soy milk, s&p, nutmeg (freshly grated makes a huge difference), dijon and cayenne. Use an immersion blender if needed.Add the flour and baking powder, blend til smooth. Crumble or cut up the cooked fake bacon and stir. Stir in the cooked veg mixture and combine well.Spray 8" square pan with Pam. Pour quiche mixture into pan (or pie plate, live it up). Sprinkle the cheddar shreds on the top of the mixture once its in the baking vessel, use a dull knife to swirl the cheddar down a bit so it's not just sitting on top of the egg mixture.Bake 30 - 40 min @ 375, til a butter knife comes out clean from the center. Tent with foil toward the end if the edges are getting too browned.Serving Size:?9 servings from 8" square pan
