Here is how you make Vegan Quinoa bowls:

Toast the quinoa in pan, add water and salt, bring up to a boil, put lid on and reduce to low, cook 15 mins. In a skillet put chopped onion with a little olive oil, cook for about 5 mins, add chopped bell pepper, took a couple mins, then add the corn, beans, lentils, and all the seasonings. Cook for 3-4 mins to marry flavors. Add half the lime juice and stir. Dish out into bowls, top with tomatoes, avocado, spinach, cilantro, and squirt the other half the lime on top. (If your lentils and beans are not cooked, you will need to cook them per instructions. I generally make a big batch and add them to a bunch of different meals like this.)
