Steam carrot strips.Soak rice noodles in cold water.Mix the soy sauce, ginger and 1/2 c water in a bowl and soak tofu strips.Put 2c cold water in a bowl big enough to set 1 spring roll skin.Once everything's chopped and ready to go, soak 1 skin for 20 sec in the cold water.Place skin on a flat surface and load in some of each veggies, but not more than 1/2 c total contents.Roll the spring roll like a burrito.
