This is a bare bones starter, totally customizable vegan one pot pasta dish that makes 4 huge servings or like 6-8 normal size ones. Add in herbs/spices, garlic, broth and water and the pasta and bring up to a boil (with lid on). Once its boiling, stir everything to make sure the pasta doesn't stick together or to the bottom of the pan. Turn heat down to around medium and simmer about 6 or 7 minutes, until the pasta is al dente and most of the liquid is absorbed. Stir in spinach, parsley, basil and pine nuts and mix until the spinach is wilted.
