Here is how you make Oaxacan Bowl - Vegan:

Heat oven to 400 degrees.Mix cumin salt and chipotle powder and set aside.Place sliced onion, sweet potates cubed, and sliced peppers on parchment. Drizzle with olive oil and sprinkle with part of the spice mix, tossing to coat. Save 1/3 of spice mix for the pecans. Place veggies in oven for 20 to 30 minutes at 400 degrees.In smaller parchment covered pan toss pecans with maple syrup and rest of spice mix. Bake 10 minutes until lightly browned.
