1)Preheat the oven to 350. In a deep 9inch or 10 inch ovenproof skillet, melt 1 tbsp butter over medium heat. Add almonds and cook, stirring frequently, about 2 minutes or until golden. Remove to a dish and set aside.2) Melt remaining 2 tbsp butter in skillet. Add the onions, mushrooms, and barley. Cook, stirring frequently, until soft and barley is golden brown, about 5 minutes.3) Stir in 1 cup of the vegetable broth. Cover and bake for 20 minutes.4) Uncover and stir in remaining cup of veggie broth, raisins, almonds, carrots, and kale. Cover and bake another 25-30 minutes.5) Remove from oven. Stir in the peas.
