Saute the carrots and bell pepper till slightly soft (5 mins). Add zucchini, squash, chickpeas and the spices (coriander, paprika, cumin, cinnamon, cayenne pepper) and cook for 5 minutes. Pour broth in skillet and bring to a boil. Reduce to simmer, cover and cook for 15 minutes (or until vegetables are tender).In a saucepan, boil 1 1/4 cups of water. Stir while adding couscous and remove from heat. Cover for five minutes as couscous absorbs the water. Serve couscous, with vegetable/broth mixture on top. Top with cilantro if desired.
