Spray the bottom of a skillet with a cooking spray (instead of butter).Over medium heat, cook the egg, zucchini, black beans until the eggs are cooked through. While cooking, skip to the avocado cream. Once the eggs are cooked, turn the heat to low and just rest the tortilla on top of the filling (to warm)Add seasoning to taste - cumin, salt & pepperWhile that is cooking, take the avocado, yogurt, lemon juice and seasoning and combine in a food processor (or mix by hand). Blend until a smooth creamy consistency.Scoop the filling into the tortilla, add about 1oz of crumbled feta cheese on top, and scoop the avocado cream on top.
