1 large carrot, shredded
1 bunch of broccoli
3 cloves of garlic, chopped fine
1 cup pesto sauce (I make homemade, but you can buy it from the store)
1 9-oz box of lasagna noodles ( I like to use the ready to bake variety)
2 15-oz containers of ricotta cheese
2 egg whites
salt and pepper to taste
2 8-oz packages of mozzerella cheese (part skim)

Here is how you make Deanna's Vegetable Lasagna:

saute the garlic, zuccini, carrots, and broccoli in the pesto sauce until the vegetables are al dente. meanwhile, combine the ricotta cheese, egg whites, salt, and pepper. layer the lasagna noodles, ricotta mixture, vegetables, and mozzerella cheese. repeat these layers one time. place last of lasagna noodles on top with a small layer of ricotta cheese and mozzerella on top.cook at 350* for about an hour, or until pasta is cooked through.cut into 12 squares and enjoy :)Number of Servings: 12Recipe submitted by SparkPeople user DLYONS518.
