Here is how you make Mediterranean vegetable medley:

Cut eggplant into 1" cubes then sprinkle with salt and leave for 15 minutes to allow bitter water to drain.Coarsely chop all vegetables into 1" pieces, crush garlic.Into a pan add olive oil, onion, garlic, mushrooms and peppers, sautee until soft (approx 5 minutes) then add tomato and tomato paste allowing to cook on high for 5 minutes.Heat oven to moderate temp.Wash and drain egglant.In a deep baking dish add eggplant and zucchini and bake for 10 minutes. Add beans, basil salt and pepper to sauce mixture and reduce to simmering for 10 minutes while eggplant mixture is baking.After 10 minutes, add sauce mixture into baking dish, add black olives and mix well.
