Add 1 Tbls Olive oil to pan and heat. Add onion and garlic, saute until onions are transparent. Add Frozen Birdseye Mixed Vegetables and cook according to package directions. Using a 2 qt casserole dish, spray with No Stick spray, add eggs, milk, nutmeg, salt & pepper. Mix thoroughly Add cooked vegetables to egg mixture, sprinkle with Parmesan cheese.
