Here is how you make Cristin's Vegetable Omelette:

Cut all veggies to small bite-sized pieces.Beat eggs, then add cheese. Set aside.Place cauliflower in microwave-safe bowl with about 1 to 2 tbsp. water. Cover with plastic wrap and microwave on high for about 3 minutes (or until desired tenderness).Add mushrooms, re-cover and microwave on high for 1 to 2 minutes. Place cauliflower, mushrooms and onions in a medium skillet and cook until the water is evaporated.Add onions, spinach and roasted red peppers and continue to cook for about 1 to 2 minutes. Cover and cook until spinach is wilted, but still bright green.Remove vegetables from skillet and reserve in a bowl. Wipe out the skillet with a paper towel (use caution not to get burned). Spray the skillet lightly with cooking spray.Add eggs to the skillet and cook on low to medium-low heat until the bottom is set and the top is slightly wet.Add vegetables to the top of the partially cooked eggs.
