8 oz cooked pasta (ziti or a short grooved pasta)
1 C asparagus
3/4 C zucchini (cut into match sticks)
1 C green beans
1/4 C pine nuts
1 tbs basil (dried)
1 tsp tarragon
1 tsp parsley
1 tsp lemon peel
1/2 tsp black pepper
1 clove garlic
1/2 C cheddar cheese (should use parmesan, but we only had cheddar)


How Do I Make Three Vegetable Penne with Tarragon-Basil Pesto?

Here is how you make Three Vegetable Penne with Tarragon-Basil Pesto:

Cook pasta to al dente. Cut asparagus spears into 2-in. pieces and zucchini into small strips (matchsticks). Add veggies to pasta after pasta has cooked for 5 minutes. Cook veggies and pasta together another 5 minutes. Toast pine nuts in a small pan until golden, place nuts, basil, tarragon, parsley, lemon, garlic, cheese and a little salt and pepper into the food processor. Add some of th pasta water to the sauce until a thick sauce forms. Drain pasta and veggies, return to pan, add pesto sauce, toss to coat. Serve immediately. Serves 4.
