Here is how you make roasted vegetable omelet:

in a 10 to 12" skillet add the butter and onion. cook the onion while the butter melts over med high heat. once the onions start caramelizing add the 3 eggs that have been beaten with 2 table spoons water. let them just sit and cook. the eggs will start to set and bubbles may start to poke up. pop them and swirl the runny eggs around the top so they cook. lift the edges and let some egg run under to cook too. once there is only a bit of uncooked egg left, add the cooked brocolli and cauliflower and top with cheese. now comes the part that doesn really matter if it's pretty or not. begin folding egg over vegetables and cheese. If you're good it'll look like an omelet. If you're me it will be sort of choppy, but if you are hungry it will be amazing!! keep cooking and flipping until vegetables are hot and egg is all set. slide onto a plate and top with salsa.
