Approximately 1-1.5 cups of roasted veggies, chopped

.75 cup skim milk

1 frozen pie crust

1 eggs and 2 egg whites

1/2 cup of part skim mozzerella cheese

salt, pepper, oregano


How Do I Make Roasted Vegetable Quiche?

Here is how you make Roasted Vegetable Quiche:

Preheat oven to 450 degrees. Roast veggies: chop and place on aluminum foil covered pan. Cover completely and tightly with tinfoil. Bake for 15 minutes at 450, then place on top of oven and let steam in the foil for another 15 minutes. Reduce heat to 350 degrees. Whisk together 2 eggs, 3 egg whites, and 1.5 cups of milk. Put the chopped roasted veggies in the frozen pie crust, sprinkle evenly with 1/2 cup of cheese. Pour milk/egg mixture into pie. Shake gently to distribute. Top with salt, pepper, oregano. Bake for 45-60 minutes in 350 degree oven. Quiche is done when you gently jiggle crust and filling doesn't move. Allow to cool in order for filling to set. Bake longer if you want a "harder" quiche. If crust begins to burn, cover with a piece of tin foil for the last 15-20 minutes. Serving Size:?Makes 6 slices
