*Potato, raw, 1 medium 7oz, chopped
Red Ripe Tomatoes, 2 medium deseeded and chopped
Tomato Paste, 0.25 cup (4 Tbsp)
Vegetable Broth, 2 cups
Parsley, 1 cup chopped fine
3/4 cup dry couscous
an additional 1 cup vegetable broth for the couscous
3/4 cup Low Fat Plain Yogurt

Heat a large saucepan with a lid over medium heat, add just 1 teaspoon (1/4 tbsp) of the oil, and the onion - cook stirring, until soft.
