2 tbsp Extra Virgin Olive Oil

.5 tsp black pepper

1.5 cup chopped crimini mushrooms
1 yam, cubed
1 large potato, cubed
1 14 oz can crushed tomatoes
6 cups vegetable broth
1 cup frozen peas
1-2 tbs corn starch
.5 cup water

1 cup Whole Wheat Flour
1 tsp Baking Powder
.25 tsp salt
dash of black pepper
.5 cup whole milk
1 tbsp canola oil

Here is how you make Spicy Vegetable Stew with Whole Wheat Dumplings:

In a big stew pot, heat the olive oil over medium high heat. Add in your onion, garlic, red pepper, and the finely chopped carrot into the pan. Stir to coat with the oil, then add the spices.When the onions start to brown, add the mushrooms and continue to cook for 2-3 minutes, then deglaze the pan by adding 1/2 cup of the vegetable broth and using your spoon to scrape up any brown bits on the bottom of the pot.Add the remaining vegetables, the crushed tomatoes or tomato sauce, and and broth. Bring the soup to a boil, then lower the heat and simmer for about 18 minutes, stirring occasionally. When the vegetables are tender, add the frozen peas.Whisk together 1 tbs of the cornstarch and the water, then stir this mixture into the pot. Let the stew cook for about 2 minutes, and check the thickness. If you want it thicker, repeat the cornstarch step, testing again after about 2 minutes of cooking.To make the dumplings, whisk the flour, baking powder, salt and pepper together. Then whisk in the milk and canola oil, being careful not to over-stir. Use a spoon to drop the batter onto the surface of the stew, without stirring. Cover the pot, and let simmer for 15 minutes with the lid on. During this time, do NOT lift the lid.
