The prep time is simply in the chopping of vegetables. Chop up all vegetables into bite size pieces and mince the garlic. Add 1 TBSP of the oil and the onion and garlic to a pan. Fry for about 2-3 mins than add all your peppers and fry for another 2-3 mins. Then add all your spices, rest of the oil, and all the vegetables and stir well. Cover and let it fry for about 2-3 mins. Then add about .25 cups of water just enough to create some steam for the rest of the cook time. Cook until vegetables are tender with the lid on.
