What Are The Ingredients For Red Lentils with Vegetables Recipe?The ingredients for Red Lentils with Vegetables are: 2 tbsp olive oil1 cup carrots, chopped 1 cup red onion, chopped 1 cup celery, chopped 2 cups canned diced tomatoes 2 1/2 cups low sodium vegetable broth (canned or homemade) 1 tbsp tomato paste 4 cups swiss chard, chopped Salt, to taste How Do I Make Red Lentils with Vegetables?Here is how you make Red Lentils with Vegetables: Heat the olive oil in a large skillet on medium-high heat. Add the carrots, onion and celery. Cook 8-10 min or until onion becomes translucent, stirring occasionally. Add tomato paste, mix into the vegetables and cook another 5-8 min or until the vegetables start to brown. Stir in the canned tomatoes, vegetable broth, and red lentils. Bring up to a boil, then turn down to low and simmer 8-10 minutes or until lentils are tender. Add the swiss chard and cook until wilted. OR use a separate pan to saute the swiss chard on high heat with a little olive oil until it is wilted, then add to the soup. Cook until thickened and flavors have melded, adding salt as need during the cooking process.Makes approximately four 1-cup servings. Would be really good served with some warm, crusty bread!Any variety of swiss chard will work. If you cannot find swiss chard, any leafy green can be substituted, such as spinach or beet greens.
