Heat a large pan to medium heat and add Olive Oil. Chop and Sautee all vegetables until translucent and soft, add baby spinach and toss with vegetables. Continue Sauteeing until spinach is slightly wilted. While vegetables are sauteeing, separate egg whites from 6 large eggs. Add two whole eggs to egg whites. Wisk in salt, pepper and Chicken Broth. Pour mixture into pan with vegetables. Brown the bottom of the egg mixture and then stir to cook the remaining liquid.
