How Do I Make Veggie Divan?

Here is how you make Veggie Divan:

Preheat oven to 350 and spray a 9 x 13 baking dish. Cook broccoli. Either boil for 3 minutes or steam to retain more nutrients. At the same time, cook zucchini, yellow squash, and mushrooms in 1 tsp. oil over medium heat for 5 minutes. Set aside. In another large saucepan, heat 1 tsp. oil over medium heat, then add scallions and garlic. Saute for 3 minutes. Slowly add flour with a whisk until incorporated. Add chicken broth, milk, and sherry and bring to a boil. Remove from heat and add 3 oz. Monterey cheese. Layer in baking dish- broccoli, half of sauce, veggie mixture, remaining sauce. Top with remaining Monterey jack cheese, parmesan, and bread crumbs. Drizzle with 1/2 tsp. oil.
