1. Spray frying pan with PAM. Add onions, red peppers and zucchini. Stir-fry on medium-high heat (7-8) until soft, about 3 minutes.2. Turn the heat down to medium (5-6), remove frying pan from heat while adding the eggs to the stir-fried mixture. Put back on heat and continue cooking the eggs until done. I try to keep the eggs as in tact as possible - more like an omelet than scrambling the eggs. You can cut the egg in half if easier to flip, try not to burn the eggs.3. When done, put 1/2 of the omelet in a bowl. Top with the cheese slice.
