1 Med Zuchini Shredded
1 5oz package Sundried Tomatoes
10oz. Frozen spinach, thawed and squeezed dry
1 Cups Shredded Cheddar Cheese
1 Cups Shredded Swiss Cheese
15 oz Egg Substitute
.5 Cups Milk
2 tsp salt
2 tsp white pepper
2 tsp ground mustard

Here is how you make Veggie Fritata:

Cook sausage, peppers and onion over med heat until cooked, drain. In large bowl, wisk eggs, milk, salt, pepper and mustard. Stir in the sausage mixture, croutons, spinach, cheeses and zucchini. Transfer to greased 13x9 baking dish, cover and refrigerate overnight. Remove from refrigerator 30 minutes before baking. Cover and bake at 350 for 40-50 minutes or until a knife inserted in center comes out clean.Serving Size:?10
