Prepare the rice according to the package. Don’t overcook! If you are using 5 minute rice, cook for 4 minutes. The rice will cook again when added to the rest. I use brown rice which takes about 20 minutes. I cook it for 18.2. Add rice to a large pot and add cans of chopped/diced tomatoes. 3. Next, add veggies. 4. Add the spices and hot sauce.5. Cook for another 15 minutes until it all comes together. 6. Once put into a bowl, add cheddar to top. 7. Enjoy!
