Boil a pot of salted water. Add the potatoes and boil until tender, 5 -10 minutes. When they are done, drain them. *Before they can be added to the hash, they need to be totally dry. When you are at the point that the veggies mixture is in the pan, then spread the potatoes onto a paper towel to really soak up any moisture. Salt and pepper them, toss a bit. Give it a rough chop, too. *While the potatoes are boiling, chop up all your veggies into nice,even pieces. Not too small, not too big. They are taking the place of the corned beef in a beef hash, basically.Heat 1 tablespoon of the oil in a big (nonstick if you've got it) pan over medium - medium high heat. Add your veggies; cook them for 10 minutes. Stir; cook five minutes longer. Add the minced garlic and spices and cook another five minutes. Remove from the pan and keep warm. *You want to get the veggies all caramleized and browned and tender. The turnip will keep a little bite, but, everything else should be very tender.*Add the remaining il to the pan. When it is hot, add the potatoes. Cook, without stirring, for 10 minutes. Give it a stir, then cook five minutes more. Add back the veggie mixture and cook about another 5 - 10 minutes. *The potatoes should be nice and crisp before you add the veggies.*I served this in a big bowl, with two poached eggs over the top.
