1 26 oz. can Del Monte Traditional Spaghetti Sauce
1 tsp. dried oregano
1 tsp dried basil
1/2 tsp fennel seed
1 tsp dried marjoram
1 tsp black pepper
6 oz. low fat or fat free cottage cheese
2 egg whites
3 Tbs. dried parsley flakes
1 roll (48 oz.) ready to serve polenta
8 oz. shredded Mozzarella cheese

Here is how you make Very Veggie Polenta Lasagna:

Preheat oven to 375. You can use any combination of vegetables you have on hand, and your favorite brand of pasta or spaghetti sauce. Seasonings can also be adjusted to your taste.Saute onion, carrots, mushrooms, broccoli, bell pepper, kale, and squash in 1 Tbs. olive oil until slightly browned. Add 1/4 cup white wine and stir up browned bits from bottom of pan. Add spaghetti sauce, oregano, basil, fennel seed, marjoram, and black pepper. Cook over low heat until thickened to a good consistency. Set aside to cool slightly while you prepare other ingredients. Mix cottage cheese, egg whites, and parsley flakes together in bowl. Thinly slice roll of polenta into 1/4" thick slices. Place half of the polenta in a 9x12 baking pan. Top with half of the sauce mixture. Top with all of the cottage cheese mixture. Add the second layer of polenta and the rest of the sauce mixture. Top with Mozzarella cheese. Bake, uncovered, until hot and bubbly and cheese starts to brown on top, around 30 minutes.
