scant 1 c. fresh broccoli florets, steamed
1/4 cup rolled oats
1/4 cup cooked lima beans
.25 cup cooked leek, chopped finely
1/2 cup tomato sauce
1 medium stalk celery, chopped
1/3 cup shredded carrot

GRAVY:
1/2 cup mushrooms, diced
1 c. veggie broth
1/2 cup milk
1 tbsp brown rice flour
1 tbsp potato starch
1/2 tbsp honey
1 tsp apple cider vinegar
pepper and salt

Here is how you make Veggie Meat-Loaf:

For the gravy: Heat a tsp of olive oil in a skillet over medium-high heat. Add the mushrooms and cook, stirring occasionally, about 5 minutes. Season mushrooms with salt and pepper to taste. Scatter the flour over the mushrooms and stir until lightly browned, about 1 minute. Add the cider vinegar, honey, and broth and bring to a boil, cooking until thickened, about 2 minutes.
