Chop fresh tomatoes, mushrooms and onions. Saut? onions (so they're soft when baked) in pan with zero calorie cooking spray. While saut?ing onions, place mushrooms, tomatoes and spinach in casserole dish (I'm using an 8x10but whatever you have is fine). Whisk eggs and milk in a bowl and season to taste (I like using rosemary, garlic and a bit of cayanne). Add one cup of Mozzarella to egg and milk mixture and whisk together. Add onions to casserole dish and then pour on the eggs. Stir a bit to make sure everything is incorporated together. Sprinkle parmesan over top. Bake for 50 minutes to an hour.
