2 medium zucchini, chopped

2 chicken or beef bouillon cubes
2 tbsp olive oil
2 cans whole tomatoes

1/2 cup chopped fresh basil
1/4 cup chopped fresh oregano

Here is how you make Chuck's Veggie Stew:

Heat oil in large pot and lightly saute' onions and garlic. Add tomatoes and water, bouillon cubes, carrots, celery, and sweet potatoes. Bring to a boil, reduce heat and simmer for about 10 minutes. Then add zucchini, peas and chopped fresh herbs. Cook for an additional 5 minutes or until all the veggies are done to your liking. This is very thick - more like stew than soup.You can add canned or fresh fish, pinto beans, chickpeas, grated parmesan etc. if you want to increase the protein values.
