I developed this recipe because I love waffles and generally want to get away from eating foods made only with white flour but hate the grainy, heavy texture of no-white-flour foods. These waffles have tons of flavor and are still lighter textured and packed with nutrition.

1/2 cup whole almonds, roasted (or toasted) but not salted
1 cup Quaker Old Fashioned Oats

2 tablespoons flaxseed meal
2/3 cup all purpose flour
2 tablespoons sugar
5 teaspoons baking powder

2 eggs, separated
2 cups milk
1/2 cup oil


How Do I Make OMG Waffles?

Here is how you make OMG Waffles:

In food processor, grind almonds and oats until very fine, then put into a mixing bowl. Add remaining dry ingredients and stir well. I use a whisk to aerate the mixture like this: work the whisk to the bottom of the bowl and bring it back up, then tap it on the side of the bowl to "sift" the contents. Continue thru all the mixture until it doesn't clump inside the whisk. This procedure adds lots of air which makes the waffles lighter in texture.In a separate bowl, mix the egg YOLKS, milk and oil, then add to dry ingredients, stirring until well mixed.Also to lighten the texture, in an electric mixer bowl beat the egg whites to stiff peaks and gently fold into batter, leaving a few clumps.Spray waffle iron with non-stick and heat it to preferred temp. Pour 1/3 cup batter onto iron, spread it around and close the iron. Leave the lid unopened until the steam stops, then you can lift lid to check doneness. Usually, a waffle is done when it doesn't cling to either top or bottom of iron, but you can also judge doneness by the color you want.Add unsweetened applesauce, or fresh fruit and/or yogurt for a healthful meal, or "splurge" with butter and syrup.
