1 cup cheddar cheese
1/8 cup mozzarella cheese
1/8 cup parmesan cheese
2 tbsp. flour
1/3 cup milk
1/2 cup chopped onions
1 small can chopped green chiles OR
1 small jalapeno pepper seeded and chopped
16 oz. bag corn
2 tbsp. minced garlic


How Do I Make Zucchini Corn Gratin?

Here is how you make Zucchini Corn Gratin:

1.Cook onions in large nonstick ovenproof skillet on medium heat 3 to 4 min. or until crisp-tender. Stir in corn, garlic, and peppers; cover. Cook 5 to 6 min. or until corn is tender, stirring frequently. 2.Mix flour and milk until blended. Add to corn mixture; mix well. Cook 4 to 5 min. or until thickened, stirring frequently. Remove from pan and put into a broiler safe pan. 3.Add zucchini to pan and salt and pepper to taste; cook for 10-15 minutes until tender. Add zucchini to corn mixture as well as the cheeses. 3.Heat broiler. Broil vegetable mixture 3 to 4 min. or until cheese is melted.
