Oil a 1.5- 2- quart gratin dish.Heat 1 Tbs olive oil in large skillet over medium heat. Add 1/2 garlic. After about 30 seconds, add zucchini and rest of garlic. Cook, stirring often, over medium-low heat for 5-8 minutes, until the zucchini has softened and is fragrant but still bright green.Add 2 Tbs parsley, thyme, salt, pepper. Stir and remove from heat.
